A soothing, anti-inflammatory soup packed with nutrients to promote healing.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons ground turmeric
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup carrots, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Add onion, garlic, and ginger; sauté until the onions are translucent.
  4. Stir in the turmeric, then add chicken broth, carrots, and kale.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper before serving.

Notes

  • Can add additional vegetables of your choice.
