- 2 pounds pork loin
- 1 cup apple cider
- 3 medium sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon butter
- 1/4 cup maple syrup
