  • 2 pounds pork loin
  • 1 cup apple cider
  • 3 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter
  • 1/4 cup maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rub the pork loin with olive oil, salt, and black pepper.
  3. Place the pork in a roasting pan and pour apple cider over it.
  4. Roast in the oven for 1 hour, basting occasionally.
  5. While the pork is roasting, peel and cube the sweet potatoes.
  6. Boil the sweet potatoes in salted water until tender, about 15 minutes.
