  • 2 pounds pork loin
  • 1 cup apple cider
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 pounds sweet potatoes
  • 1/4 cup butter
  • 1/2 cup milk
  • 2 tablespoons maple syrup

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Season the pork with salt, pepper, and cinnamon.
  3. Sear the pork on all sides until golden brown, about 5 minutes.
  4. Pour apple cider over pork and place in the oven. Roast for about 1 hour or until cooked through.
  5. Meanwhile, peel and chop sweet potatoes. Boil until tender, about 15-20 minutes.
  6. Drain sweet potatoes and mash with butter, milk, and maple syrup.
  7. Serve the apple cider pork with a side of mashed sweet potatoes.
