  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 2 large eggs
  • 1 cup plain Greek yogurt
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup diced apples

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together flour, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together sugar, eggs, Greek yogurt, applesauce, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients until just mixed; fold in the diced apples.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before serving.

Notes

  • For extra sweetness, sprinkle some sugar on top before baking.
  • These muffins can be stored in an airtight container for up to 3 days.
