1 cup mascarpone cheese
1 cup heavy cream
1/2 cup strong brewed coffee, cooled
1/4 cup sugar
1 teaspoon vanilla extract
2 tablespoons cocoa powder, for dusting
Instructions
In a mixing bowl, whip the heavy cream and sugar until soft peaks form.
In another bowl, mix the mascarpone cheese and vanilla extract until smooth.
Gently fold the whipped cream into the mascarpone mixture until well combined.
Dip each Biscoff cookie into the cooled coffee and layer them in a serving dish.
Spread half of the mascarpone mixture over the cookies.
Repeat the layers, finishing with the mascarpone mixture on top.
Dust with cocoa powder before serving.
Notes
For a stronger coffee flavor, use espresso instead of regular coffee.
Chill the tiramisu for at least 4 hours or overnight for best results.
