A hearty and flavorful Cajun potato soup that highlights the smoky goodness of turkey bacon.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup turkey bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy and set aside.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Add diced potatoes and chicken broth, bringing to a boil.
  4. Once boiling, reduce heat and simmer until potatoes are tender.
  5. Stir in heavy cream and Cajun seasoning.
  6. Use an immersion blender to blend the soup to the desired consistency.
  7. Season with salt and pepper to taste.
  8. Serve topped with crispy turkey bacon.
