1 cup ricotta cheese
1 teaspoon vanilla extract

1/2 cup pistachios, chopped
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Add the ricotta cheese, vanilla extract, and almond extract, mixing until well combined.
In another bowl, whisk together the flour, salt, and baking powder, then gradually add it to the wet mixture, stirring until just combined.
