A delicious and hearty dinner option, combining classic Caprese flavors with moist chicken meatloaf.

  • 1 cup breadcrumbs
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup fresh basil, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the ground chicken, breadcrumbs, mozzarella, basil, sun-dried tomatoes, egg, garlic, salt, and pepper until well combined.
  3. Transfer the mixture to a loaf pan and shape into a loaf.
