Chicken Enchiladas are a must-try for dinner!

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the chicken, half of the enchilada sauce, and half of the cheese.
  3. Soften the corn tortillas in a hot skillet.
  4. Fill each tortilla with the chicken mixture, roll them up, and place in a baking dish.
  5. Pour the remaining enchilada sauce over the tortillas and top with the remaining cheese.
  6. Bake for 20-25 minutes or until bubbly.

Notes

  • Serve with sour cream and guacamole for extra flavor.
