- 2 cups shredded cooked chicken
- 1 cup enchilada sauce
- 1 cup shredded cheese
- 8 corn tortillas
- 1/2 cup diced onions
- 1/4 cup chopped cilantro
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the chicken, half of the enchilada sauce, and half of the cheese.
- Soften the corn tortillas in a hot skillet.
- Fill each tortilla with the chicken mixture, roll them up, and place in a baking dish.
- Pour the remaining enchilada sauce over the tortillas and top with the remaining cheese.
- Bake for 20-25 minutes or until bubbly.
