A delicious and hearty bake combining chicken, leeks, and butternut squash, perfect for cozy dinners.

  • 2 cups butternut squash, diced
  • 1 cup leeks, sliced
  • 1.5 pounds chicken thighs, boneless and skinless
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large ovenproof skillet, heat olive oil over medium heat.
  3. Add the leeks and sauté until soft.
  4. Add the butternut squash and cook for an additional 5 minutes.
  5. Push the vegetables to the sides and place the chicken thighs in the center.
  6. Season the chicken with salt, pepper, and thyme.
  7. Pour the chicken broth over everything.
  8. Bake in the oven for 25-30 minutes or until the chicken is cooked through.
