  • 1 pound chicken breast, diced
  • 2 medium sweet potatoes, peeled and cubed
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 cups spinach, fresh
  • 1 lime, juiced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, and ginger, and sauté until translucent.
  2. Add the diced chicken and cook until browned.
