- 1 1/2 cups all-purpose flour
- 1 cup fresh cranberries
- 1/2 cup sugar
- 1/4 cup orange juice
- 2 large eggs
- 1/3 cup vegetable oil
- 1 tablespoon orange zest
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the eggs, orange juice, vegetable oil, and orange zest.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the cranberries.
- Fill each muffin cup about 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack.
Notes
- For a sweeter muffin, you can increase the sugar to 3/4 cup.
