These Citrus Orange Cranberry Muffins are a delicious and zesty treat perfect for breakfast or a snack.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tablespoon orange zest
  • 1 cup fresh cranberries

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the orange juice, vegetable oil, and egg until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the orange zest and cranberries.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack.

Notes

  • For a sweeter muffin, you can increase the sugar by 1/4 cup.
  • Feel free to substitute frozen cranberries if fresh are unavailable.
