A delicious and easy coconut chicken rice bowl packed with tropical flavors.

Ingredients

  • 2 cups jasmine rice
  • 1 lb chicken breast, diced
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp ginger, grated
  • 1 green onion, chopped for garnish

Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add diced chicken and cook until browned.
  3. Stir in coconut milk, chicken broth, bell pepper, soy sauce, lime juice, and ginger.
  4. Bring to a simmer and add jasmine rice.
  5. Cover and reduce heat, cooking for about 15 minutes or until rice is tender.
  6. Fluff with a fork and garnish with green onions before serving.

Notes

  • For extra flavor, marinate chicken in soy sauce and lime juice before cooking.
  • Feel free to add other vegetables like carrots or peas.
