A rich and creamy soup loaded with the flavors of baked potatoes, turkey bacon, and chicken ham.

  • 4 large russet potatoes
  • 1/2 cup turkey bacon, diced
  • 1/2 cup chicken ham, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, sliced
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Start by cooking the turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the onion and garlic, sautéing until translucent.
  3. Peel and chop the potatoes, then add them to the pot along with the chicken broth.
  4. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Stir in the heavy cream, cheddar cheese, and sour cream until well combined.
  6. Return the turkey bacon and add the chicken ham, stirring gently.
  7. Season with paprika, salt, and pepper to taste.
  8. Serve hot, garnished with sliced green onions.

Notes

  • For a vegetarian option, substitute bacon and ham with smoked tempeh.
  • Using low-fat cream will reduce the richness of the soup.
