Ingredients

  • 1 rotisserie chicken shredded
  • 8 cups chicken broth
  • 2 cups mushrooms, sliced
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onions, carrots, and celery until softened.
  2. Add garlic and mushrooms, cooking until the mushrooms are browned.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the shredded rotisserie chicken, thyme, and rosemary.
  5. Season with salt and pepper to taste.
  6. Reduce heat and stir in the heavy cream.
  7. Simmer for 10 minutes before serving.
