  • 8 slices turkey bacon
  • 1 tablespoon ginger, minced
  • 4 cups chicken broth
  • 2 cups coleslaw mix
  • 1 cup green onions, chopped
  • 2 eggs, beaten
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and chop.
  2. Add ginger to the pot and sauté until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Stir in coleslaw mix and green onions.
  5. Reduce heat and let simmer for 5 minutes.
  6. Slowly add beaten eggs, stirring gently.
  7. Mix in soy sauce, sesame oil, and season with salt and pepper.
  8. Top with chopped turkey bacon before serving.

Notes

  • For extra flavor, add garlic or your favorite spices.
  • Can substitute turkey bacon with regular bacon.
