A delightful twist on classic bread with the refreshing flavors of cranberry and orange.

  • 2 cups all-purpose flour
  • 1 cup fresh cranberries
  • 1 cup orange juice
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the orange juice, melted butter, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients and fold in the cranberries.
  5. Pour the batter into a greased loaf pan.
  6. Bake for 60 minutes or until a toothpick comes out clean.
  7. Let cool before slicing.

Notes

  • This bread is best served fresh, but can be toasted as well.
  • For a sweeter flavor, add additional sugar to the cranberries before folding into the batter.
