Ingredients

  • 6 medium potatoes, peeled and diced
  • 1 pound smoked sausage, sliced
  • 1 cup bell peppers, chopped
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the smoked sausage and cook until browned.
  2. Add onions, garlic, and bell peppers; sauté until soft.
  3. Stir in diced potatoes and Cajun seasoning, then pour in chicken broth.
  4. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Add heavy cream and season with salt and black pepper to taste. Heat through before serving.
