  • 2 pounds potatoes
  • 1 cup turkey bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add turkey bacon and cook until crispy. Remove and set aside.
  3. In the same pot, add onions and garlic, sauté until soft.
  4. Peel and chop potatoes, then add them to the pot.
  5. Pour in chicken broth, bring to a boil, then reduce heat and simmer until potatoes are tender.
  6. Blend the soup until smooth, then stir in heavy cream.
  7. Season with salt, pepper, and paprika, then top with crispy turkey bacon before serving.
