4 boneless, skinless chicken breasts
1 tablespoon olive oil
3 cloves garlic, minced
1 cup heavy cream
1 cup spinach, fresh
1/2 cup sun-dried tomatoes, chopped
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
salt and pepper to taste
Instructions
In a skillet, heat olive oil over medium heat and add chicken breasts. Cook until golden and no longer pink, about 7 minutes per side. Remove chicken from the skillet and set aside.
In the same skillet, add minced garlic and sauté for about 1 minute.
Add heavy cream, spinach, sun-dried tomatoes, Parmesan cheese, and Italian seasoning. Stir until the spinach wilts and the sauce thickens.
Return the chicken to the skillet, coating it with the sauce. Simmer for an additional 5 minutes.
Season with salt and pepper to taste, and serve warm.
