  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 1/2 cup diced onions
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin

Instructions

  1. Preheat your oven to 375°F.
  2. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  3. Add shredded chicken, cumin, and half of the enchilada sauce. Stir until well combined.
  4. Fill each tortilla with the chicken mixture and top with cheese.
  5. Roll up the tortillas and place them seam-side down in a baking dish.
  6. Pour remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  7. Bake for 25-30 minutes until golden and bubbly.
