  • 1 cup coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 cup diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup spinach, fresh

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add diced onion, garlic, and ginger. Sauté until onions are translucent.
