A delicious and nutritious casserole featuring sweet potatoes, eggs, turkey bacon, and veggies.

  • 2 cups sweet potatoes, cubed
  • 6 large eggs
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup bell peppers, diced
  • 1 cup spinach, chopped
  • 1/2 cup onion, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine sweet potatoes, eggs, turkey bacon, and vegetables.
  3. Add garlic powder, salt, and pepper, and mix well.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 30-35 minutes or until eggs are set and top is golden.
