This floral pistachio rose ice cream is a luxurious and indulgent treat, perfect for hot summer days or special occasions.

Ingredients

  • 1 cup pistachios, shelled
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 teaspoon rose water
  • 1/4 teaspoon salt
  • 1/2 cup chopped dried roses, optional

Instructions

  1. In a food processor, blend the shelled pistachios until finely ground.
  2. In a saucepan, combine the ground pistachios, heavy cream, whole milk, sugar, and salt. Heat over medium heat until simmering.
  3. Remove from heat and stir in rose water. Allow to cool for 30 minutes.
  4. Transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions.
  5. In the last few minutes of churning, add chopped dried roses if using.
  6. Transfer the ice cream to a container and freeze for at least 4 hours until firm.

Notes

  • Make sure the pistachios are completely ground for a smooth texture.
  • Adjust the rose water to taste for a more intense floral flavor.
