A delicious and easy recipe for Garlic Herb Chicken served with carrots.

  • 4 chicken breast fillets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon dried thyme
  • 1 pound carrots, sliced
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Add the chicken fillets and ensure they are well coated.
  4. Place the chicken on a baking sheet.
  5. In the same bowl, toss the carrots with any remaining marinade and add to the baking sheet.
  6. Bake for 25-30 minutes until chicken is cooked through and carrots are tender.
  7. Serve warm.
