  • 1 ½ cups crushed gingersnap cookies
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine gingersnap cookie crumbs and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in sour cream, vanilla, ginger, cinnamon, and nutmeg until combined.
  6. Pour the cheesecake filling over the crust in the springform pan.
  7. Bake for 50-60 minutes until the center is set but still slightly jiggly.
  8. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
  9. Chill in the refrigerator for at least 4 hours or overnight before serving.
