  • 1 whole turkey
  • 2 tablespoons olive oil
  • 1 tablespoon sea salt
  • 1 teaspoon black pepper
  • 4 carrots, chopped
  • 1 onion, quartered
  • 4 celery stalks, chopped
  • 2 sprigs of rosemary
  • 4 cups chicken stock

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the turkey by patting it dry and rubbing olive oil over it.
  3. Season with salt and black pepper, inside and out.
  4. Place vegetables and herbs inside the turkey cavity.
  5. Roast the turkey for about 2.5 to 3 hours, basting occasionally.
