  • 1/2 cup protein powder
  • 1/2 cup honey or maple syrup
  • 1/2 cup almond milk
  • 1 cup fresh blueberries
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, combine flour, protein powder, baking powder, and salt.
  3. In another bowl, mix the wet ingredients: honey, almond milk, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Fold in the blueberries gently.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For added sweetness, you can add a mashed banana.
