  • 1 cup lentils
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 cups spinach

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crisp. Remove and crumble.
  2. Add olive oil to the pot, sauté onion, carrots, and celery until tender.
  3. Stir in garlic, cook for 1 minute.
  4. Add lentils, broth, thyme, salt, and pepper; bring to a boil.
  5. Reduce heat, simmer for 30 minutes or until lentils are tender.
  6. Stir in spinach until wilted and add the crumbled bacon back to the pot.
