- 2 pounds chicken thighs
- 1 tablespoon jerk seasoning
- 4 cups chicken broth
- 1 cup diced tomatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- 1 lime, juiced
- 1 bay leaf
- Salt to taste
- Black pepper to taste
- 2 cups shredded cabbage
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion, garlic, carrots, and celery. Sauté until softened.
- Season the chicken thighs with jerk seasoning and add them to the pot.
- Pour in the chicken broth and diced tomatoes.
- Add the bay leaf and bring to a boil.
- Reduce heat and simmer for 30-40 minutes until chicken is cooked through.
- Remove chicken from the pot, shred it, and return it to the soup along with the lime juice and shredded cabbage.
- Season with salt and black pepper to taste.
- Simmer for an additional 10 minutes.
- Serve hot and enjoy!

- For a spicier soup, add more jerk seasoning.
- This soup can be made in a slow cooker for easier preparation.
