A warm and spicy jerk chicken soup perfect for cozy nights.

Ingredients

  • 2 pounds chicken thighs
  • 1 tablespoon jerk seasoning
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 lime, juiced
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste
  • 2 cups shredded cabbage

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, carrots, and celery. Sauté until softened.
  3. Season the chicken thighs with jerk seasoning and add them to the pot.
  4. Pour in the chicken broth and diced tomatoes.
  5. Add the bay leaf and bring to a boil.
  6. Reduce heat and simmer for 30-40 minutes until chicken is cooked through.
  7. Remove chicken from the pot, shred it, and return it to the soup along with the lime juice and shredded cabbage.
  8. Season with salt and black pepper to taste.
  9. Simmer for an additional 10 minutes.
  10. Serve hot and enjoy!

Notes

  • For a spicier soup, add more jerk seasoning.
  • This soup can be made in a slow cooker for easier preparation.
