  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup diced tomatoes
  • 1/2 cup diced cucumber
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon red wine vinegar

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and black pepper.
  3. Rub the mixture over the chicken thighs and place in a baking dish.
  4. Bake the chicken for 35-40 minutes or until the internal temperature reaches 165°F (75°C).
  5. In another bowl, combine diced tomatoes, cucumber, red onion, parsley, and red wine vinegar to create the Mediterranean-style salsa.
