  • 2 chicken breasts
  • 1 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ teaspoon garlic powder
  • ¼ cup chopped parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix maple syrup and Dijon mustard.
  3. Place chicken breasts in the mixture and marinate for at least 30 minutes.
  4. Peel and cube sweet potatoes, then toss with olive oil, salt, pepper, and garlic powder.
  5. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
  6. In the meantime, grill or bake the marinated chicken until cooked through, about 20 minutes.
  7. Slice the chicken and serve over roasted sweet potatoes, garnished with parsley.
