- 1 pound chicken thighs
- 2 cups basmati rice
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 4 cups chicken broth
- 1/4 cup olive oil
- Salt to taste
- Black pepper to taste
- In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic, sauté until fragrant.
- Add chicken thighs and cook until browned on all sides.
- Stir in cumin, coriander, paprika, turmeric, and cinnamon.
- Add rice and chicken broth, bring to a boil.
- Reduce heat, cover, and simmer until rice is cooked and liquid is absorbed.
- Fluff the rice and serve hot, garnished with parsley if desired.
