One Pot Chicken Shawarma Rice

Delicious and easy chicken shawarma rice cooked in one pot for a quick weeknight meal.

Ingredients

  • 1 pound chicken thighs
  • 2 cups basmati rice
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 4 cups chicken broth
  • 1/4 cup olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic, sauté until fragrant.
  2. Add chicken thighs and cook until browned on all sides.
  3. Stir in cumin, coriander, paprika, turmeric, and cinnamon.
  4. Add rice and chicken broth, bring to a boil.
  5. Reduce heat, cover, and simmer until rice is cooked and liquid is absorbed.
  6. Fluff the rice and serve hot, garnished with parsley if desired.

Notes

  • For added flavor, marinate the chicken in spices for a few hours before cooking.
  • This dish can easily be made in advance and reheated.
