  • 1 tablespoon olive oil
  • 1 pound chicken breast, diced
  • 1 cup bell pepper, chopped
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 cup corn, frozen
  • 1 cup black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 cup cheddar cheese, shredded
  • 1/4 cup cilantro, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in bell pepper, onion, and garlic; sauté until softened.
  4. Add rice, chicken broth, corn, black beans, chili powder, and cumin; bring to a boil.
  5. Reduce heat, cover, and simmer until rice is cooked.
  6. Stir in cheddar cheese and cilantro; mix until cheese is melted.

Notes

  • For added heat, include jalapeños.
  • Can substitute quinoa for rice for a healthier option.
