- 1 pound chicken breast, diced
- 1 cup corn, frozen
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheese
- 1 tablespoon taco seasoning
- 2 cups chicken broth
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- In a large pot, heat olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the diced chicken and cook until browned.
- Stir in the bell pepper, corn, black beans, and taco seasoning.
- Add the chicken broth and cooked rice, stirring to combine.
- Bring to a simmer, cover, and cook for 15 minutes.
- Remove from heat and stir in shredded cheese until melted.
