This One-Pot Cheesy Southwest Chicken & Rice is a flavorful and easy-to-make meal that’s perfect for weeknights.

Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 cup corn, frozen
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese
  • 1 tablespoon taco seasoning
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the diced chicken and cook until browned.
  3. Stir in the bell pepper, corn, black beans, and taco seasoning.
  4. Add the chicken broth and cooked rice, stirring to combine.
  5. Bring to a simmer, cover, and cook for 15 minutes.
  6. Remove from heat and stir in shredded cheese until melted.
  7. Serve warm, garnished with fresh cilantro if desired.

Notes

  • For extra flavor, add lime juice before serving.
