These Perfect Mini Beef Wellington Bites are an easy and indulgent treat, perfect for any occasion.

Ingredients

  • 1 pound beef tenderloin
  • 1 tablespoon olive oil
  • 1 cup mushrooms, finely chopped
  • 2 tablespoons Dijon mustard
  • 1 package puff pastry, thawed
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil and sauté mushrooms until they release moisture and become golden brown.
  3. Season the beef tenderloin with salt and pepper, sear in the same skillet, and then brush with Dijon mustard.
  4. Roll out the puff pastry, cut into squares, and place a piece of beef with sautéed mushrooms on each.
  5. Fold the pastry over to seal and brush with beaten egg.
  6. Bake for 15-20 minutes or until golden brown.
