4 chicken thighs
1 cup rice
2 cups chicken broth
1 cup cilantro
1 jalapeño
2 cloves garlic
1 lime
2 tablespoons olive oil
1 teaspoon cumin
Salt to taste
Instructions
In a large pan, heat olive oil over medium heat and add chicken thighs, cooking until browned.
Remove chicken and set aside. In the same pan, add garlic, jalapeño, and cumin, cooking for a minute.
Add rice and stir to coat, then pour in chicken broth and return the chicken to the pan.
Cover and simmer for 20 minutes, or until rice is tender and chicken is cooked through.
While the chicken and rice are cooking, blend cilantro, garlic, lime juice, and salt to create the green sauce.
Serve chicken over rice with a drizzle of green sauce on top.
Notes
For extra heat, leave the seeds in the jalapeño.
You can substitute chicken thighs for breasts if preferred.
