  • 4 cups beef broth
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 cup green bell pepper, diced
  • 1 cup mushrooms, sliced
  • 4 ounces turkey bacon, chopped
  • 2 cups cooked shredded beef
  • 1 cup heavy cream
  • 2 cups shredded provolone cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, bell pepper, and mushrooms. Sauté until softened.
  2. Stir in turkey bacon and cook until crispy.
  3. Add beef broth, shredded beef, garlic powder, salt, and black pepper. Bring to a simmer.
  4. Reduce heat and stir in heavy cream and provolone cheese until melted and smooth.
  5. Serve warm, garnished with extra cheese if desired.
