  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 can (15 oz) pumpkin puree
  • 2 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. In the same pot, add ground turkey and cook until browned.
  3. Add diced onion and garlic, sauté until soft.
  4. Stir in pumpkin puree, chicken broth, black beans, corn, and all spices. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes. Stir occasionally.
  6. Serve hot, topped with crumbled turkey bacon.

Notes

  • For a vegetarian option, omit turkey and bacon, and use vegetable broth.
