- 1 pound ground turkey
- 4 slices turkey bacon
- 1 can (15 oz) pumpkin puree
- 2 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
- In the same pot, add ground turkey and cook until browned.
- Add diced onion and garlic, sauté until soft.
- Stir in pumpkin puree, chicken broth, black beans, corn, and all spices. Bring to a boil.
- Reduce heat and simmer for 30 minutes. Stir occasionally.
- Serve hot, topped with crumbled turkey bacon.
Notes
- For a vegetarian option, omit turkey and bacon, and use vegetable broth.
