  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine the flour, baking powder, spices, and salt.
  3. In another bowl, mix the pumpkin puree, sugars, oil, eggs, and vanilla.
  4. Gradually add the dry ingredients to the wet ingredients until just combined.
  5. Fill muffin cups about 3/4 full and swirl with cinnamon sugar if desired.
  6. Bake for 20-25 minutes until a toothpick comes out clean.
  7. Allow to cool before serving.
