- 1 1/2 cups all-purpose flour
- 1 cup pumpkin puree
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, combine the flour, baking powder, spices, and salt.
- In another bowl, mix the pumpkin puree, sugars, oil, eggs, and vanilla.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- Fill muffin cups about 3/4 full and swirl with cinnamon sugar if desired.
- Bake for 20-25 minutes until a toothpick comes out clean.
- Allow to cool before serving.
