  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 1/2 cup fresh lemon juice
  • 1 cup chicken broth

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Flatten the chicken breasts to even thickness.
  2. Dredge the chicken in flour, shaking off excess.
  3. Heat olive oil and butter in a skillet over medium heat.
  4. Add the chicken and cook until golden brown and cooked through, about 4-5 minutes per side.
  5. Remove the chicken from the skillet and set aside.
  6. Add lemon juice, chicken broth, and capers to the skillet, scraping up any brown bits.
