Scale
2 cups fresh raspberries
1 cup heavy cream
1/2 cup sugar
1 teaspoon vanilla extract
4 large egg whites
1/4 teaspoon salt
Instructions
Begin by puréeing the raspberries in a blender until smooth, then strain to remove the seeds.
In a mixing bowl, whip the heavy cream with sugar and vanilla extract until soft peaks form.
In a separate bowl, beat the egg whites with salt until stiff peaks form.
Carefully fold the raspberry purée into the whipped cream, then gently fold in the beaten egg whites.
Pour the mousse into heart-shaped molds and refrigerate for at least 4 hours.
Once set, gently unmold and serve garnished with additional raspberries.
Notes
For a richer flavor, use dark chocolate shavings as a garnish.
You can substitute frozen raspberries if fresh are not available.
