  • 4 cups vegetable broth

  • 1 teaspoon oregano

  • 1/2 cup coconut milk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and roast them for about 30-40 minutes or until tender.
  3. In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sauté until translucent.
  4. Add the roasted sweet potatoes, vegetable broth, basil, oregano, salt, and pepper to the pot.
