Ingredients

  • 3 pounds beef roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Heat olive oil in a large oven-safe pot over medium-high heat.
  3. Season the beef roast with salt and pepper, then brown on all sides in the pot.
  4. Remove the beef and add onions and garlic to the pot, cooking until softened.
  5. Stir in cranberry juice, balsamic vinegar, and brown sugar, then return the beef to the pot.
  6. Cover and braise in the oven for 3-4 hours, until tender.
  7. Let the roast rest before slicing and serving with the glaze.
