- 1 pound Andouille sausage
- 1 pound chicken thighs, boneless and skinless
- 1 cup onion, diced
- 1 cup bell pepper, diced
- 1 cup celery, diced
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 2 cups water
- 2 cups cooked rice
- 2 tablespoons Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 tablespoon olive oil
- In a large pot, heat olive oil over medium heat. Add onion, bell pepper, and celery. Cook until softened.
- Add garlic and cook for an additional minute.
- Stir in Andouille sausage and chicken thighs. Cook until browned.
- Add diced tomatoes, chicken broth, water, Cajun seasoning, salt, pepper, and cayenne pepper. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Add cooked rice and stir. Simmer for another 5 minutes before serving.
Notes
- For a spicier soup, increase cayenne pepper.
- Serve with crusty bread for a complete meal.
