Spicy Jambalaya Soup is a delicious and hearty dish featuring flavorful Andouille sausage and chicken.

  • 1 pound Andouille sausage
  • 1 pound chicken thighs, boneless and skinless
  • 1 cup onion, diced
  • 1 cup bell pepper, diced
  • 1 cup celery, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 cups water
  • 2 cups cooked rice
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, bell pepper, and celery. Cook until softened.
  2. Add garlic and cook for an additional minute.
  3. Stir in Andouille sausage and chicken thighs. Cook until browned.
  4. Add diced tomatoes, chicken broth, water, Cajun seasoning, salt, pepper, and cayenne pepper. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes.
  6. Add cooked rice and stir. Simmer for another 5 minutes before serving.

Notes

  • For a spicier soup, increase cayenne pepper.
  • Serve with crusty bread for a complete meal.
