  • 4 slices turkey bacon
  • 2 tablespoons olive oil

  • 1 teaspoon chili powder

  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the baby potatoes and cut them in half.
  3. In a large bowl, combine the olive oil, cumin, smoked paprika, chili powder, salt, and pepper.
  4. Add the potatoes to the bowl and toss to coat them evenly with the spice mixture.
  5. Spread the potatoes on a baking sheet and arrange the turkey bacon on top.
  6. Bake for 25-30 minutes or until the potatoes are tender and crispy, stirring halfway through.
  7. Remove from the oven, squeeze lime juice over the potatoes, and sprinkle with fresh cilantro before serving.
