  • 4 chicken thighs skinless and boneless
  • 1 cup apple cider
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cabbage, thinly sliced
  • 1 cup carrots, grated
  • 1/4 cup apple, diced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey

Instructions

  1. In a bowl, mix apple cider, Dijon mustard, olive oil, salt, and pepper. Add chicken and marinate for at least 30 minutes.
  2. Preheat oven to 375°F (190°C).
  3. Place marinated chicken in a baking dish and pour the marinade over it. Bake for 25-30 minutes until the chicken is cooked through.
