4 chicken thighs skinless and boneless
1 cup apple cider
2 tablespoons Dijon mustard
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 cups cabbage, thinly sliced
1 cup carrots, grated
1/4 cup apple, diced
2 tablespoons apple cider vinegar
1 tablespoon honey
Instructions
In a bowl, mix apple cider, Dijon mustard, olive oil, salt, and pepper. Add chicken and marinate for at least 30 minutes.
Preheat oven to 375°F (190°C).
Place marinated chicken in a baking dish and pour the marinade over it. Bake for 25-30 minutes until the chicken is cooked through.
In a separate bowl, combine cabbage, carrots, apple, apple cider vinegar, and honey. Toss to mix.
Serve chicken warm with the autumn slaw on the side.
