1 cup wild rice
2 cups pumpkin puree
1 onion chopped
3 cloves garlic minced
4 cups vegetable broth
1 cup coconut milk
2 teaspoons thyme
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Rinse the wild rice under cold water and set aside.
In a large pot, sauté the onion and garlic until translucent.
Add the pumpkin puree, vegetable broth, coconut milk, wild rice, thyme, salt, and pepper.
Bring to a boil, then reduce heat and simmer for about 45 minutes or until the rice is tender.
