- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 1 sweet potato, diced
- 2 cups kale, chopped
- 1 tablespoon maple syrup
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Rinse the quinoa under cold water.
- In a saucepan, bring vegetable broth to a boil and add quinoa. Reduce the heat, cover, and simmer for about 15 minutes.
- In a large skillet, heat olive oil over medium heat. Add onion and sauté until translucent.
- Add carrots, sweet potato, and cook until tender, about 10 minutes.
- Stir in kale, cooked quinoa, maple syrup, salt, and pepper. Cook for an additional 5 minutes.
- Serve warm, garnished with additional maple syrup if desired.
